The Olive Spicy Thai Cucumber Salad

- 1/3 cup The Olive Soyu Cucumber Infused Vinegar
- 1 tbsp sugar
- 1 English cucumber
- 1/4 red onion, thinly sliced
- 1 jalapeno chili, thinly sliced
- 1/4 cup fresh cilantro, coarsely chopped
- 2 tbsp roasted peanuts, coarsely chopped
In a small pan, combine vinegar, sugar and a pinch of salt and pepper. Heat and stir until sugar is dissolved, 1-2 minutes. Let cool completely.
Cut the cucumber into slices about 1/4 inch thick. Transfer to a bowl and add the thinly sliced onion and jalapeno chili. Pour the vinegar mixture over the vegetables and stir well. Let the vegetables marinade in the refrigerator for 30 minutes to blend the flavors. Add chopped cilantro and top with peanuts to serve.
