The Olive Classic Bolognese

- 3 slices thick bacon, finely diced
- 1 large yellow onion, finely diced
- 2 carrots, peeled and finely diced
- 2 ribs celery, finely diced
- 2 cloves garlic, minced
- 1 1/2 lb lean ground beef
- 1 1/2 lb ground pork shoulder
- 1/2 cup whole milk
- 1 can crushed tomatoes
- 2 cups beef broth
- 1 cup red wine
- 2 tbsp The Olive Organic Garlic EVOO
- 2 tsp salt
- 1 tsp pepper
In your slow cooker on the sauté setting, sauté bacon, onion, carrots, celery and garlic in The Olive Organic Garlic EVOO until soft. Stir in the beef and pork and cook, breaking up the meats with a spatula. Once meat is no longer pink, stir in milk, tomatoes and wine. Stir until blended and set the slow cooker to low for 8 hours or high for 4 hours. Serve over your favorite cooked pasta sprinkled with Parmesan.
