The Olive Penne alla Vodka

- 1 shallot, diced
- 1 garlic clove, minced
- 3 tbsp The Olive Organic Garlic Infused EVOO
- 1/4 cup tomato paste
- 1 cup vodka
- 1 can whole peeled tomatoes, crushed by hand
- 1 cup heavy cream
- Salt and pepper
- Penne pasta, cooked according to package instructions
In a large deep sauté pan, cook the shallot, garlic and a pinch of salt in The Olive Organic Garlic Infused EVOO over medium low head 1-2 minutes. Add the tomato paste, and stir to combine onions and garlic. Sauté 1-2 minutes additional. Add the vodka and simmer until the alcohol aroma evaporates and the liquid reduces by half. Add the tomatoes and cream and season with salt and pepper to taste. Simmer, stirring frequently for 5 minutes until sauce is thick and creamy. Add cooked penne pasta to sauce and stir to combine. Serve with fresh garlic bread and sautéed shrimp for a lovely homemade Italian dinner.
