Made by pressing whole fresh Eureka lemons together with early harvest olives at the moment of crush — not infused after pressing, not flavored with extract, but genuinely fused at the most fundamental level — this oil delivers a depth and authenticity of lemon character that no infused oil can replicate. The Eureka lemon is the classic California lemon — the bright, clean, distinctly recognizable lemon that defines the flavor most people mean when they say lemon. Bold, bright, and deeply citrusy with a pleasant tartness that wakes up every ingredient it touches without ever tipping into bitterness.

The early harvest pressing preserves maximum polyphenols and delivers a robust, complex oil base that stands up beautifully to the assertive lemon character — the result is a fused oil with genuine depth, remarkable freshness, and a pure lemon identity that is completely and unmistakably its own.

A note on choosing between our citrus fused oils: Both our Eureka Lemon and Persian Lime EVOOs are extraordinary fused oils, but they are as distinctly different as the fruits themselves. The Eureka Lemon is brighter, more tart, and deeper in citrus character — reach for it when a recipe specifically calls for lemon, when you want clean bright acidity, or when cooking classic European and Mediterranean dishes where lemon is the defining flavor. The Persian Lime is sweeter, rounder, and more gently tropical — reach for it when a recipe calls for lime, or when cooking Asian, Mexican, and Indian inspired dishes where lime's distinctive character defines the cuisine. When in doubt, follow the fruit — if you'd squeeze lemon on it, use this. If you'd squeeze lime on it, reach for the Persian Lime.

Pairs beautifully with:

  • Grilled or pan seared fish — halibut, sea bass, sole, or salmon
  • Shrimp scampi or seared scallops
  • White wine butter sauces — stir in at the finish for extraordinary brightness
